Meenatai G. Kamble, is working as scientist in Agro Food Processing and Technology Division (AFPTD) at CSIR-NIIST, Thiruvananthapuram, India. She obtained her Ph.D. in food science and technology from NIFTEM-K, Kundli (Haryana) in the year 2023. Her doctoral research focused on development of fruit-based encapsulation system for probiotic cells. These selected encapsulating systems also act as prebiotic. These combination of prebiotic and probiotic act as synbiotic formulation, simultaneously it has positive effect on probiotic cells survivability in harsh gut condition to improve the gut health. The majority of diseases are the outbreak of imbalance gut dysbiosis. She has presented her work in several national and international conferences, symposium and seminars, and delivered lectures as resources person on functional food. She has published research papers, book chapters, conference paper and abstracts.
Her research interests include food product development, value addition of fruits, vegetables, cereals and millets, functional foods, nutraceuticals, encapsulation of bioactive compounds, prebiotics and probiotics for gut health, food fortification, advanced and minimal food processing technologies, food preservation, bio-preservation, shelf-life extension, nutrient bioavailability, and sensory evaluation.
