Executive Summary

Healthy cooking oil with optimum fatty acid content enriched with carotenoids and tocopherols- Vitamin A deficiency (VAD) is an important nutritional problem in India, resulting in an increased risk of severe morbidity and mortality. Blended vegetable oils with optimum fatty acid profile enriched with beta carotene was developed to combat malnutrition due to vitamin A deficiency. Field level acceptability studies for dietary application of the blends were successfully carried out.
